Every once in a while and totally unintentionally my brain spews out a good idea.

Tomato Spice Cake

February 12, 2011 by Montserrat {Cranial Hiccups} 3 Comments

When the craving for spice cake hits but I don’t have the time to make my favorite recipe, this one gets whipped up. It is easy and delicious! Don’t let that tomato soup discourage you from trying it. No one will ever know it is in there.

Tomato Spice Cake

1 box spice cake mix
1 can condensed tomato soup
1/2 cup water
2 eggs

Mix all ingredients together for 2 minutes. Pour into any type pan you wish (follow suggestions on bake of cake mix box). Make sure the pan is greased. Bake according to directions on cake mix box for the type of pan you have. We made cupcakes today and frosted with this deliciously smooth, not overly sweet frosting.

OKay…so let me get this straight. Grape jelly on my meatballs and tomato soup in my cupcakes. All-righty! 🙂

I used to make this way back when…it is pretty good and you don’t taste the tomato soup. But with wheat, egg, and milk allergies, cake is not on my menu anymore. sniff….
